GREEK ZUCCHINI PIE RECIPE

Kolokithopita, or Greek Zucchini Pie, is the perfect comfort food for the Summer. It is a simple combination of zucchini, onions, herbs, eggs & feta, wrapped in a flaky phyllo dough.

Ingredients

 Phyllo dough  Extra virgin olive oil   Yellow onion | Dill |Parsley Mint | Eggs | Feta cheese Zucchini Salt & black pepper

Shred the zucchini and leave to drain for about an hour. Heat olive oil in a skillet, add onions and cook for about 3-4 min. Let cool.  Preheat the oven to 350°

Chop parsley, dill, and mint. Combine feta and eggs and add salt & pepper. Add onions, herbs & feta mixture to zucchini.

Brush the bottom of baking dish with oil Place the first layer of phyllo dough and brush with oil; continue until you have 6 layers Pour the zucchini filling into the baking dish

 Cover with a sheet of phyllo dough and brush with olive oil; add 6 layers. Fold over the dough, and brush with olive oil & poke with holes. Bake for an hour or until golden brown.

Cut into squares and serve warm.
