Kolokithopita, or Greek Zucchini Pie, is a simple combination of zucchini, onions, herbs, eggs and feta, wrapped in a flaky phyllo dough. It makes for an awesome, light vegetarian meal.

PREPARE Shred the zucchini and place it in a colander. Next, cook the onions until translucent, then chop up the parsley, dill and mint. Combine feta and eggs and seasoning.
COMBINE Combine the zucchini, with the onions, herbs and feta mixture. place the first layer of phyllo dough in a baking dish and brush with olive oil. Repeat until you have 6 layers.
ASSEMBLE Pour the zucchini filling into the baking dish and cover with another 6 layers of phyllo dough. Fold over the flaps of the dough, and brush the entire top with olive oil.
Bake until the crust is crisp and golden brown. Then cut into squares and serve warm.
