Pisto Manchego is a classic Spanish dish that incorporates fresh Mediterranean vegetables like peppers, onions, tomatoes, courgettes (zucchini) and sometimes even eggplant.

PREPARE TOMATOES Add the tomatoes to boiling water and leave them until the skin starts to break. Then peel off the skin and chop them up.
SAUTE Next, saute the onion for 5 minutes, then add in garlic and peppers and cook for a few more minutes.
SIMMER Reduce the heat, add zucchini, tomatoes and seasoning and cook for 30 minutes, stirring occasionally.
Serve drizzled with olive oil, slices of Manchego cheese and a sprinkle of parsley.
