Greek Zucchini Fritters

There are so many zucchini fritters recipes out there but I am totally obsessed with Greek Zucchini Fritters with Feta, called ‘Kolokithokeftedes’. They’re a perfect pairing of fresh, summer zucchinis, feta cheese, and tons of fresh herbs.

Ingredients

Zucchini | Red Onion Dill | Mint | Chives | Eggs Feta Cheese | Flour | Oil

PREPARE ZUCCHINI Shred the zucchini, sprinkle with salt and let sit for a while. Then squeeze out the excess moisture, using a colander.

MIX FRITTERS Add chopped onions, herbs and feta to the zucchini and mix it all together. Next, beat the eggs and add it to the mixture, along with the flour.

COOK FRITTERS Heat some oil and add a tablespoon of the mixture to the pan. Cook until golden brown, then flip and cook on the opposite side.

Serve with tzatziki or Greek yogurt.
