Turkey Stuffed Acorn Squash – it’s Fall on a plate. Turkey with apples, cranberries and dried thyme stuffed in a sweet acorn squash makes for an irresistible combination of fall flavors.

Ingredients

Acorn Squash | Ground Turkey Dried Cranberries | Celery Apple | Thyme | Breadcrumbs Chicken Stock | Garlic Salt Parmesan Cheese

PREPARE SQUASH Cut the top and bottom off the squash, then cut in half vertically and remove the seeds. Brush with olive oil and season with garlic salt, and pepper.

COOK Roast in the oven for 50 minutes to 1 hour. In the meantime cook the ground turkey, then set aside and cook the onions and thyme.

COMBINE Add celery, apple, and cranberries and cook for another 3-4 minutes, then add the meat back into the pan with chicken stock and seasoning.

Stir in breadcrumbs and cheese, then fill the squash with stuffing and bake for 15 minutes.
