BOTWINKA 

POLISH  YOUNG BEETS SOUP

Botwinka is a very famous Polish soup made from young beets, usually served during summer months when young beets are in season.

Ingredients

Clarified Butter | Onion | Leek Carrots | Celery | Beets  Potatoes | Broth | Sour Cream Dill | Parsley | Pepper | Lemon

Clean your beets!  - Cut off the stems & leaves & set to soak in water. - Peel the beet bulbs. - Pat leaves dry . -Cut the beets, stems, and leaves and set aside.

 Peel and chop onions, leeks, carrots & celery. Cook onions & leeks in clarified butter until soft. Add celery & carrot and cook a couple more minutes.

Add potatoes, beets, stems, and leaves and broth. Cook for about 30 minutes, until all the veggies are soft.

Season to taste and add fresh lemon juice if desired. Serve with fresh dill and a dollop of sour cream
