Place the chicken thighs in a plastic bag and marinate in Mediterranean spices, lemon, and Extra Virgin Olive Oil For 20 min or up to 8 hours.
Pan sear the chicken, skin side down, in the olive oil for 8 min one side and 5 min the other.
Transfer the skillet into a hot oven and cook for 20-25 minutes, until the internal temperature shows 165F.
Place on a serving plate and spoon over the finishing sauce. Garnish with parsley.
