Spanish Style Garlic Shrimp is cooked in olive oil with tons of garlic, dried chilies or Spanish smoked paprika, and brandy or sherry wine. It's absolutely outstanding!
In a cast iron skillet (or other heavy frying pan) heat up the olive oil;
Slice 3 cloves of garlic and add to oil. Cook for about 2 minutes until garlic is golden brown and crispy but not burned. Remove garlic with slotted spoon.
Season shrimp with salt and pepper on both sides;
Chop remaining garlic cloves and add them to the oil that garlic chips were cooked in;
Add smoked paprika to the pan and stir everything together;
Add shrimp and cook for 2 minutes on each side;
Add sherry cooking wine and cook for one minute;
Add parsley, garlic chips and serve immediately with crusty bread or baguette.
