PREPARE Chop up tomatoes and parsley and mix together with olive oil, salt, and pepper.
POACH EGGS Bring water to a boil, add vinegar, then crack the eggs individually into a small bowl and slowly pour into the pot. Cook for 3 minutes.
ASSEMBLE TOAST Cut bread slices in half, add tomatoes and top with parmesan cheese. Then toast until the cheese is melted and a little crispy.
SERVE Place the poached egg on top, and sprinkle with olive oil, salt, pepper, and toasted ground sesame seeds.
