PAN FRIED HADDOCK

Pan Fried Haddock, Mediterranean Style, with white wine, cherry tomatoes, Kalamata olives, and tangy capers, is a super easy, but very flavorful dish that can be ready in just 20 minutes.

Ingredients

Haddock | Flour | Egg | Oil Pepper | Olive Oil | Onion | Garlic White Wine | Chicken Stock Cherry Tomatoes | Capers Kalamata Olives | Peperoncini Parsley | Basil

Season fish on both sides with salt and pepper, then cover with flour. Beat an egg and coat the fish with the egg wash on both sides.

 Heat oil, and fry the fish until golden brown. In a separate pan, heat up olive oil and cook onions for 2-3 minutes.

Add chopped garlic and cook for one more minute, then add white wine to deglaze the pan. Next, add tomatoes, olives, capers and peperoncini.

Add chicken stock and let it reduce by half. Then sprinkle with fresh herbs and serve with the fish.
