LINZER COOKIES

Indulge in the timeless charm of Linzer Cookies (Linecké cukroví), a delectable treat crafted from a traditional Czech recipe. These delicate almond-based cookies, sandwiched with sweet jam, offer a delightful blend of textures and flavors.

Ingredients

All-Purpose Flour | Butter Almond Flour | Eggs Powdered Sugar | Vanilla Organic Lemon Rind Red Currant Jam

MAKE THE DOUGH In a food processor, combine flour, and powdered sugar. Add eggs, lemon rind, and vanilla, mix until the dough comes together. Wrap in plastic wrap and refrigerate overnight.

CUT THE COOKIES Divide the dough into 4 pieces and roll out to about ¼ inch thick, on a lightly floured surface. Cut out your desired shapes: half will be a solid disc,  the other half will have a small hole.

BAKE THE COOKIES Transfer the cut-out cookies onto a lined baking tray and bake until rose golden. The tops (with the cut-out) will bake faster than the bottoms so don't mix them on one sheet.

ASSEMBLE THE COOKIES Let cool, then sprinkle some powdered sugar on the top cookies. Spread red currant jam on the bottom cookies and close the sandwich with a top cookie.
