GREEK  GREEN BEANS

 (FASOLAKIA LATHERA)

Greek Green Beans (aka, Fasolakia Lathera)  is a classic Greek dish of fresh summer green beans braised in extra virgin olive oil, tomatoes, and herbs.

Ingredients

Olive Oil | Green Beans  Tomatoes | Onion | Garlic Potatoes | Oregano | Sugar  Water | Salt | Pepper | Lemon Parsley | Feta

Prep the veggies:  - Peel & chop onions  - Peel & chop garlic  - Wash & trim beans - Peel potatoes & cut - Grate the tomatoes

Heat up a 1/4c of olive oil, add onions and cook for about 3 min, add oregano and garlic. Cook for 1 min.

Add another 1/4c of olive oil, beans, potatoes, tomatoes, water, salt, sugar and black pepper.

Cover & cook low and slow for about an hour. Check for seasoning, add lemon juice and the last of the olive oil and mix together.

Top with feta and fresh parsley.
