FENNEL CHICKEN

MEDITERRANEAN STYLE

FENNEL CHICKEN MEDITERRANEAN STYLE A very easy, one pot meal for any day of the week. It is seasoned with cinnamon, cumin and smoked paprika for an irresistible and flavorful chicken dish.

Ingredients

Chicken | Olive Oil | Butter Carrots | Fennel | Raisins Olives | Orange Juice | Stock Cinnamon | Cumin | Salt & Pepper Smoked Paprika | Parsley | Basil

Heat up olive oil & butter. Season chicken on both sides. Sear on both sides for about 4 min until golden brown.

Remove chicken from the pan and add fennel and carrots. Cook about 7 min. Add cinnamon, cumin and smoked paprika, stir and cook  1 min. Return chicken to the pan .

Add orange juice, chicken stock and raisins. Cover & cook for 15 min. Add olives and salt  & pepper.

 Remove the chicken, slice it and place on a serving dish. Top with vegetables, sauce, basil and parsley. Serve with couscous  or crusty bread.
