COOK CHICKEN Season the chicken and place skin side down in a hot skillet. Cook until the skin is nicely browned, then flip and cook for a few more minutes. Place in the oven and cook for 15-20 minutes.
COOK VEGETABLES Next, sauté the mushrooms and shallots. If using cognac, flambe it before deglazing the pan with wine. Then, add the tomatoes and chicken stock and let it cook for about 10-15 minutes.
THICKEN SAUCE If needed, add flour and water to thicken the sauce. Then, stir in the cold butter and let it melt. Return the chicken to the skillet and sprinkle with herbs.
Serve with mashed potatoes or egg noodles.
