Veal Milanese (or as the Italians call it ‘Cotleta Alla Milanese’) is a simple Italian dish of breaded veal cutlets, that are coated with flour, egg and breadcrumbs, then fried until golden brown.

PREPARE Prepare your dishes for breading - beat eggs in a shallow bowl, and add flour and breadcrumbs to two separate plates. Then season veal cutlets with salt and pepper.
BREAD THE CUTLETS Bread the cutlets, starting with flour, then egg, and then the breadcrumbs.
COOK VEAL Heat the clarified butter and fry the cutlets for 3 to 4 minutes per side. Then place them in the oven to keep warm.
Serve warm with lemon wedges, your favorite topping, or with pasta.
