With summer around the corner, so comes the need for nice, refreshing dishes. This Polish Cucumber Salad (Mizeria) ought to find its way to your summer dishes repertoire. Simple ingredients like cucumber, dill, green onions, and sour cream are all you need.

Ingredients

  • 1 English Cucumber seedless, peeled and thinly sliced
  • 1/2 cup Fresh Dill chopped
  • 1/2 cup Green Spring Onions green and white parts
  • 2/3 cup Sour Cream
  • 1/2 teaspoon Salt
  • Fresh Black Pepper

Instructions

  • Using either knife, mandolin or shredder with slicing option, slice the cucumber very thinly and place in a bowl; 
  • Add salt to the cucumbers, mix well and set aside for at least 15 minutes (ideally for 30 minutes);
  • After at least 15 minutes, strain the cucumbers through a colander and squeeze out any leftover water;
  • Add cucumbers back into a bowl, add chopped dill and spring onions; Mix in the sour cream and combine together;
  • Check for seasoning and add salt and pepper as needed.
  • You can chill it before serving. 

Notes

*Optional additions for this salad:
  • 1 tablespoon of white vinegar, or
  • squeeze of lemon juice;
  • 1 teaspoon of sugar
**This recipe calls for 2/3 cup of sour cream, but you can add less or more depending on your consistency preferences. 
***For an even lighter version of this salad use Geek or natural yogurt instead of sour cream.
