Fennel Chicken Mediterranean Style with carrots, raisins, and olives is a very easy, one-pot meal for any day of the week.

Ingredients

Chicken Breasts | Olive Oil Butter | Carrots | Olives Fennel | Raisins | Cinnamon Orange Juice | Chicken Stock Cumin | Paprika | Basil Italian Parsley | Salt | Pepper

sear chicken Season chicken with salt, pepper and paprika, then sear in olive oil and butter until nicely golden brown. 

cook fennel Next, cook the fennel and carrots, stirring often. Then stir in cinnamon, cumin and paprika and return the chicken to the pan.

combine and cook Stir in the orange juice, stock and raisins and cook for 15 minutes. Then add the olives and adjust seasoning to taste.

serve Place the chicken on a serving dish topped with vegetables, sauce, parsley and basil. Serve with couscous or crusty bread.
