For the right texture: Place your potatoes in a bowl of water for 10-15 minutes to remove excess starch. Then pat them dry.
Into a cast iron pan: Add the butter & oil. Then potatoes, flat side down, cook for about 5 min on the first side, until golden brown. Season with salt & pepper. Then flip and season on the other side. Add garlic & herbs.
Pour in stock & place in oven Bake the for about 30-35 min, until most of the liquid has evaporated and the potatoes are tender inside.
Garnish the potatoes with some fresh herbs and serve with your favorite protein.
