Chicken Kiev is a classic Eastern European breaded chicken cutlet stuffed with garlic and parsley compound butter.

COMPOUND BUTTER Mix butter, minced garlic, parsley, salt and pepper until fully combined. Then place in plastic wrap and freeze for 30 minutes.
PREPARE CHICKEN Butterfly the chicken and use a meat pounder to tenderize it. Season, then place some butter pieces into the center and wrap it up, like a burrito.
CHICKEN BREADING Place flour, beaten egg, and breadcrumbs into separate dishes. First, add the chicken to the flour; then to beaten egg mixture; and finally into the seasoned breadcrumbs.
COOK CHICKEN Fry the cutlets in an oven-proof skillet until golden brown. Then cover with foil and bake in the oven for 20 minutes.
Sprinkle with some extra parsley on top and serve with your favorite side dish.
