ROAST VEGETABLES Chop up the tomatoes and onions, then place all the vegetables on a baking sheet and drizzle with olive oil. Roast for about 40 minutes.
BLEND Next, transfer the slightly cooled vegetables to a blender, add the broth and blend until smooth.
SIMMER Once blended, add to a soup pot and bring to a boil, then add in the heavy cream and seasoning and simmer for a few minutes.
Cut up the bread and cook in olive oil until crispy. Then serve the soup with the crispy croutons and a splash of cream.
