Crispy baked chicken tenders with honey mustard

For the chicken:

  • 1 pound chicken tenders
  • 1 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg
  • 1 tablespoon of dijon mustard
  • 1/2 cup of corn starch
  • 1 tablespoon of extra virgin olive oil

For the sauce:

  • 2 tablespoons of honey
  • 2 tablespoon of dijon mustard
  • 1/2 teaspoon of red wine vinegar
  • 1 tablespoon of chopped fresh rosemary
  • 1 teaspoon of water
  • black pepper to taste


  • Preheat the oven to 475F
  • In a food processor, combine: panko, cheese, rosemary, garlic powder and black pepper;
  • process on high for a few seconds until thoroughly combined
  • In a shallow bowl, whisk together the egg and mustard
  • Prepare the assembly line:
  • Plate with corn starch
  • Bowl with egg mixture
  • Plate with seasoned breadcrumbs
  • Place pieces of chicken in corn starch first, then egg, then breadcrumbs until all are fully coated
  • Place breaded chicken on the baking sheet with a rack
  • Bake for 20-25 minutes until cooked through
  • After 15 minutes of baking sprinkle chicken with olive oil to achieve a golden brown crust.
