Ingredients

cups
of baby bella mushrooms
, sliced
1
small onion
, chopped
2
scallions
, white and green parts, chopped
4
eggs
, beaten
1/3
cup
of shredded parmesan cheese
1
tablespoon
of butter
salt and pepper to taste
Instructions
Preheat the oven to 375 degrees
In a cast iron pan (or other pan that can go into the oven) heat up 1 tablespoon of butter
Add chopped onions and white parts of scallions
Cook for about 3 minutes until onions are soft
Add mushrooms and cook for another 3-5 minutes until the mushrooms are sauté
Whisk eggs together, add salt and pepper and pour the egg mixture on top of the mushrooms
Add most of the green scallions and let it cook for about 5 minutes until almost set
Transfer the pan to the oven and cook for about 5 minutes
Sprinkle the cheese and let cook for another 10 minutes until the eggs are cooked through and the cheese melted.
