Mushroom Scallion Frittata with Parmesan Cheese

  • 2 cups of baby bella mushrooms , sliced
  • 1 small onion , chopped
  • 2 scallions , white and green parts, chopped
  • 4 eggs , beaten
  • 1/3 cup of shredded parmesan cheese
  • 1 tablespoon of butter
  • salt and pepper to taste


  • Preheat the oven to 375 degrees
  • In a cast iron pan (or other pan that can go into the oven) heat up 1 tablespoon of butter
  • Add chopped onions and white parts of scallions
  • Cook for about 3 minutes until onions are soft
  • Add mushrooms and cook for another 3-5 minutes until the mushrooms are sauté
  • Whisk eggs together, add salt and pepper and pour the egg mixture on top of the mushrooms
  • Add most of the green scallions and let it cook for about 5 minutes until almost set
  • Transfer the pan to the oven and cook for about 5 minutes
  • Sprinkle the cheese and let cook for another 10 minutes until the eggs are cooked through and the cheese melted.
