Dill Mashed Potatoes with Brown Butter is a great side dish that can pairs perfectly with any kind of meat or vegetables. With the holidays around the corner, I suggest giving this a go.

Ingredients

  • 4 Russet potatoes large, peeled and cubed
  • 1/2 cup milk whole
  • 3 tbsp butter unsalted
  • 1 tbsp salt
  • 1 tbsp dill fresh, chopped

Instructions

  • Place peeled and cubed potatoes into a pot with water; add salt and bring to boil;
  • Cook potatoes until tender for about 20-25 minutes;
  • In the meantime place 3 tablespoons of butter in a saucepan, cook it on medium high heat without touching for about 5 minutes, until it is browned;
     Pour the butter into a bowl through a fine strainer and set aside;
  • Once the potatoes are cooked, drain them and place back into the pot, add milk and 2 tablespoons of brown butter; 
  • Mashed the potatoes with the potato masher until smooth;
  • Fold in dill and mix well; check for seasoning;
  • Serve the potatoes with the remaining brown butter and more dill.

Notes

You can brown more butter and add as needed. I used 3 tablespoons but you can add more if you chose so.
