FRENCH HUNTER'S CHICKEN

CHICKEN CHASSEUR

Chicken Chasseur, or Hunter’s Chicken, is one of the most popular French recipes. It contains simple ingredients like bone-in chicken, mushrooms, tomatoes, wine, and herbs. It’s very easy to make and looks as amazing as it tastes.

Ingredients

Chicken Thighs | Clarified Butter Mushrooms | Shallots | Cognac Dry White Wine | Tomatoes Stock | Flour | Tarragon | Parsley

Cook seasoned chicken, skin side down, in a hot pan with butter, until the skin is browned. Flip and cook for another 4-5 minutes. Transfer onto a baking sheet and cook in the oven for about 15-20 minutes.

Season mushrooms and cook for about 5 minutes. Then add shallots and let them sweat. Add cognac, let it almost entirely cook-off, then add the wine and deglaze.

Add tomatoes, tomato paste, and chicken stock, and let cook. If your sauce is too liquidy, combine flour and water, to thicken it up. Cook for another 2 minutes.

Once the sauce has the right consistency, turn the heat off, add cold butter and let it melt. Sprinkle with herbs and serve with mashed potatoes or egg noodles.
