Ingredients

Almond Flour | All Purpose Flour Powdered Sugar | Butter Eggs | Lemon Rind | Vanilla FILLING Red Currant Or Raspberry Jam

MAKE THE DOUGH Combine flour, sugar, and butter in a food processor until sandy.  Mix in eggs, lemon rind, and vanilla until a dough forms. Then wrap in plastic and chill overnight.

CUT THE COOKIES Divide the dough into 4 pieces and roll out to about ¼ inch thick. Cut out your shapes: half will be a solid disc, and the other half will have a small hole.

BAKE Transfer the cookies to a baking tray and bake until rose golden, for approximately 10 to 15 minutes.

Let cookies cool, then dust the cookie tops with powdered sugar, and spread red currant jam on the bottoms. Sandwich together and enjoy!
